These moist muffins are packed with carroty goodness. They deliver a mild maple taste and just a hint of spice. If you’re searching for the perfect snack for the fall days ahead, look no further than these delicious delights.

 

 

The Recipe

1/4 cup butter or margarine

1 egg

3/4 cup maple syrup

1 cup milk

1 cup grated carrots

1 cup rolled oats

1 1/4 cup flour

1 tbsp baking powder

1/2 tsp salt

1/2 tsp allspice

1. In a medium bowl, beat together butter, egg and syrup. Add milk, carrots and oats. Blend well.

2. In another bowl, sift together flour, baking powder, salt and allspice. Add this to the butter mixture.

3. Line a muffin tin with medium-sized paper cups. Fill each cups approximately three-quarters full. Bake in a 400F oven for 20-30 minutes, or until muffin tops are golden brown.

Mix It Up! 

- Frost these muffins with cream cheese icing and transform them into mouthwatering carrot maple cupcakes.
